For over 200 years they have been producing this sweetness, collecting sap and boiling it down in iron kettles, over open wood fires until golden brown.  It all started with the Wallace Clan, who originated in Hemingford Quebec.  It wasn’t until 1964 that Chesley Wallace and Family came to St. Joseph Island, and started pioneering with maple tubing and vacuum systems, starting with 300 taps in 1965.  Today their roots grow deeper and the Clan grows stronger; partnering with Don & Sue Manchur the family business has grown throughout the years, they are currently working with 6000 taps and expanding yearly.  Traditional technologies, modern equipment, limestone base soils, and healthy hard maple trees is what gives them the ‘sweet disposition and Edge’ in producing natural organic flavored syrup. The process begins in the “Maple Sugar Bush”. Each spring (March 1st – Mid April) the tapping begins. When the sugar maple tree is in their dormancy state the sap begins to drip as the days warm up. Sap is collected through multi- levels of tubing throughout the bush. After being filtered the sap awaits being processed through reverse osmosis system. The concentrated sap is then boiled until it evaporates to syrup consistency. 219 degrees equals 100% Pure Maple Syrup.  The maple product is then filtered, packaged and labelled accordingly.
